Basically, you have to overwrite the images that are being used with your
own images.

With some of the more complex template systems, this can be a real pain to
do.  I have found
http://www.joomlapraise.com/joomla/extensions/premium/template-parameters-interface.php
this
extension does a good job of making things "easy" for you by scanning for
all the images in use and giving you a UI to upload and replace images.
