There is probably no easier, more defined way than learning PEAR's Mail

http://pear.php.net/packages.php?catpid=14&catname=Mail
http://pear.php.net/manual/en/package.mail.mail.php

While it supports PHP native mail() call it's probably better to  
learn the package anyway.

shell> sudo pear install --alldeps Mail
