Yes, it gives you the ability to select the features you want for your 
application. Remember, Red Hat/CentOS are providing basics and 
stability. You should want to compile PHP, Apache, and whatever else you 
need for you app so you maintain control of the application's space.

That control comes with a cost though, you need to patch your custom 
tools when there's a security update. By having control you can provide 
a level of stability for your app, if you are using something outside 
the standard packages.
