Personally, I think you should check out two projects:

OSCommerce
http://www.oscommerce.com/

PHPCard
http://www.phpcart.com/

IMHO, OSCommerce is one of the best ways to go. It's easily
customizable, can handle multiple forms of payment, and is stable.
PHPCart, I've never used but have heard good things about it.
