[nycphp-talk] de-moronizing an Excel sheet

Can't resist trying to pick your brains a little more instead of spending
the next $x hours in trial and error.

This is an Excel spreadsheet created on Mac. I am opening it with Open
Office Calc on a Fedora Linux box. I can "Save as..." and choose text, and
there are  myriad choices for "Character set." Which is my best bet?
